Gọt lấy phần trắng của cùi bưởi rồi thái thành những lát mỏng. Ngâm cùi bưởi vừa thái vào thau nước muối loãng khoảng 30 phút sau đó bóp và xả nhiều nước. Tỏi bóc vỏ đập dập. Ớt sừng thái khúc ngắn. Thịt ba chỉ thái nhỏ con cờ.
Đun nóng 1-2 muỗng canh dầu ăn, cho tỏi và ớt vào đảo đều cho dậy mùi. Cho thịt ba chỉ vào chiên cho cháy xém cạnh. Tiếp đến cho cùi bưởi vào, đảo đều tay.
